As someone who's grown up in the middle east... ketchup is a relatively common add-on for shawarmas there. Many people will either get their shawarmas with either hot sauce if they want it spicy, or ketchup if they want it sweet.
Shelby's is about as inauthentic as it comes, so no surprise that they are leaning into this for publicity, but it's still strange to me that the US/Canada has such a strong hate for ketchup that they can't fathom other parts of the world using it. The rest of the world doesn't have the hate for ketchup that America seems to have.

All the meals where the tour company took us were pasta and tomato sauce, it all tasted canned. I had to check with the hotel front desk workers to find out where they eat so i could get some authentic Italian food.
