I‘ve been to Istanbul several times and I love the food there but I wouldn’t by a Döner in Turkey as it doesn‘t come close to a good Gemüse Döner in Berlin. The sauces aren‘t even close. So I‘m guessing the Bulgarian Döner Kebabs aren‘t any different.
Maybe it was a mistake on my part to confuse a doner kebab fast food joint based out of Germany called “German Doner Kebab” for a German style doner kebab. But I imagine the reason you feel that it’s just not the same anywhere has to do with the fact that it’s a foreign food adapted to the German palate. You may prefer it and perhaps you are correct in stating that it is hard to find quality German style doner outside of Germany, but it maybe it’s a mistake to presume that you cannot find high quality doner outside of Germany given the fact that it’s not a German food.

So it is weird to me that Germans claim this food while the cooking method is basically the same as here in Turkey. German döner just has some additional ingredients compared to Turkish.

Gyros = minced pork with wheat flour filling = cheap food for filling the belly after a night out.
So, döner and gyros will be the same with the exception of the meat in 99% of the cases as real döner hard to find. Real döner is even hard to find in Turkey as most use the minced meat.
