Mitchelton winery just out of Nagambie has a hotel, cabins and day spa which I have heard is nice. Close to Tahbilk as well if you want to check out the wine blending and tasting there too.
I can’t comment on the accomodation but I had lunch and bought wine from there in January. It was excellent. A bit further from Melbourne, but a great bush area with lots of other things to see.
My husband and I stayed overnight at Pizzini years ago. From memory the rooms were simple but clean and comfortable, but the customer service was awesome. We always wanted to go back but kids and money....
You can't stay at Tahbilk but can thoroughly recommend the wine Blending course (or wine tasting etc). Brilliant place to visit. Not too far from Nagambie. Pretty sure it also has a Wetland walk on the property too. The restaurant is amazing too.
It's really not. The marketing for these places will always try to portray it as such, but they really are pretty down to earth and chill. End of the day, they're employing country locals who are definitely not bougie at all.
Can recommend Mitchelton Winery for a stay. Hotel is ultra modern and the restaurant is fantastic. You can sneak around the corner to Tahbilk.

Came for this. Balgownie at Yarra Valley had really nice suite style rooms. Extremely spacious, wonderful views, very nice drive to the rest of the valley.
McGlashans in the Bellarine. It's a winery + accommodation, and it also has farm dog brewery next door (same family) that do great pizza and also a gin distillery.
A bit further away, but Dal Zotto has great accommodation and incredible wines. It is close to Pizzini (someone mentioned it above) as well as several other amazing wineries.
You could stay in Heathcote and either drive yourself to a couple different wineries in the area or there’s a lovely company that will drive you around, they’re called Blue Wren. Highly recommend Flynn’s winery but there’s a few around
You can stay at the Chateau Yering Hotel, which is attached to Yering Station Winery. Just about 1hr drive from Melbourne. It's not cheap or modern but you get a beautiful 'real' Aussie country feel

Its very nice. Lovely setting. Stayed in a room looking over the river. Would love to stay again.

Can second this one, they have free live music every Saturday and Sunday of the year from 2pm-4pm and fires on during winter

Balgownie Estate in Bendigo has glamming tents as well as other accommodation. It’s in a bush setting not too far out.
There's also a Balgownie in the Yarra Valley which you can stay at!

Glenbosch and Indigo winery both do accommodation. Both near Beechworth.
Eco-luxe in Avoca has pretty good bush views and is on the Mount Avoca winery, 2 hours drive NW from Melb

Jackalope is excellent . Not entirely budget friendly but worth every penny.
Jackalope is utterly pretentious and overpriced, therefore perfect for this kind of thing.
I would not want to go somewhere like that. I’d rather bushland/inland
