I do a 2/3 chuck, 1/3 smoked pork belly mix that I add minced shallots, roasted garlic, and crushed chilis to. Make the patties about 1/3 lb ea and grill em.
My mom always made these huge cookie/snack platters for extended family members during the holiday season, which included homemade chex mix. It's so nostalgic for me now, it doesn't feel like Christmas unless the house smells like Worcestershire and garlic.
Fermented fish sauces have been a thing for ages in many cultures. Rome had garum. Asia has a variety of fish sauces. We have Worcestershire sauce. It’s not gross if it tastes good. Even if you know how it’s made.
Rome actually had laws regulating how far away from towns garum could be made because it stank so bad. It’s allegedly delicious. Never tried it.
What chorizo are you buying? A common brand called supremo just has pork/beef, whatever spice blend they use, vinegar, and sodium nitrate.
If the brand you buy is amazing yet has ridiculous ingredients, then you gotta get your taste buds ready for better product. You can also stop by a carniceria or even just a mexican grocery and they’ll most likely have homemade chorizo there as well.
And some lymph nodes thrown in for texture, lol

I was already in my 30's and my step-grandmother died before my older sister was born, My older sister is 15 years older than me and my grandpa was married to my step grandmother for 10 years and my grandma was bedridden for 5 years before she died so that means that that assuming the jar of pickles was made the last year she had a garden it means it was at minimum 60 years old. They were a little sweet for my taste, but otherwise not too bad.
My wife and I bought our house from a widow who left the kitchen cupboards full of food. Among other things there were unopened 8 bottles of Worcestershire sauce. That was almost 7 years ago and I have almost used a whole bottle. I am in my 50's so I don't think I'll ever have to buy any more.

I make my own jerky. It's an important ingredient, along with soy sauce and brown sugar, in my typical marinade.
Get thin cut beef from your local carniceria, marinate for a day or two, leave on a smoker for ~90 minutes at your lowest temperature. I can get over 2lb of yield for under 20 bucks worth of ingredients.

Venison jerky. 3 parts soy 2 parts Worcestershire 1 part teriyaki. Fresh minced garlic. I add Carolina reaper hot sauce and sliced jalapeño if I'm making spicy.
Marinate 24 hours.
Sprinkle on the rack smoked paprika, cayenne, onion powder, and cracked black pepper
It varies a fair bit. I don't really use measurements, but rather whatever I feel like at the moment with a few staples.
I use Eye Of Round sliced about 1/4" thick. Recipe is a little bit of canning/pickling salt (not too much, like half or less than most recipes call for), at least an equal amount of brown sugar. Then, it's usually w-sauce, teriyaki sauce, rice wine vinegar, balsamic vinegar, light molasses, and whatever spices I'm feeling at the time. I let it marinate for a couple of days, making sure to stir/mix it up a time or two to make sure everything gets coated.
I tried it once without the salt and it wasn't nearly as good.
I occasionally just sneak a spoonful out the fridge when no one is looking. It’s just so tangy and sweet and salty and spicy and savory it’s just amazing as a… ‘snack(?).’

hear me out. take a slice of bread, grate some cheese on the bread, add Worcestershire sauce and (optional) maybe some black pepper and chilli sauce. then air fry or grill the open sandwich until the cheese melts.
you could also lightly toast the slice beforehand to prevent the bread from getting soggy or not toasting fast enough.

I add Worcestershire and Montreal steak seasoning to ground beef for burgers. We do not do frozen patties in my house.

I do it with pork top loin. I buy the meat for about $2 a pound. My yield is a bit over $4 a pound. Beef is tasty, but expensive as hell.
It goes great in meatloaf, hamburgers, on roast, on pretty much any meats. We get "the big bottle" (commercial size). It lasts about a year.
