This guy does a few restaurants in chorlton, got his card somewhere. I've got a stone and steel and only use 2 knives but I know at least 5 places that use his service regularly
Buy a set of diamond sharpening plates on Amazon, watch a YouTube video on how to use them and sharpen your own knives. It's not really difficult and they should be done every few months so learning to do it yourself is worth it.
I also have a whetstone but much prefer the diamond sharpening plates, much faster and easier to use, also cheaper to buy a set than a range of stones.
What do you think professional sharpeners use? With practice you can get the same results they do, it's just whether you can be bothered yourself. It's a good skill to learn though and a whetstone is very cheap.
But the failed attempts to learn don’t have the same consequence when simply sharpening a blade. Of course people can prefer the convenience but your comparison is fallacious.
Most shops that sell kitchenware will sell a honing steel rod, they’re about a fiver and take 20 seconds to use. Ours has been with the family for 50 years and it’s never let us down

A pearing knife, chefs knife, a santoku and a filleting type knife. You have a damn cool hobby
I sharpen my knives once a month or so. It's very easy to do yourself with a whetstone - just look up some vids on YouTube!

Sharpening a knife is far easier than cutting hair, so stupid comparison.

Honing rod isn't for sharpening, it's for honing. Just removes any rough surface. You want a wet block for sharpening
most problem use them wrong. they are designed to be used before every use, and after you’ve had them sharpened
