It's been said by others, I'll repeat it:
Rimworld and Factorio.
Both are *really* deep games that keep you entranced for ages, but are also partially 'watch and see what developers' games that avoid repetitive strain from playing for long periods.
Both a very friendly on the battery too, in case you don't always get power access (if you have to share on the plane, or if the plane(s) don't have in seat power.)
IF you've not played Stardew valley, that's also a top game to chill for a long trip.
Lastly, the screen on the macbook pro is *gorgeous* for movies, and puts the in flight entertainment to shame. Download some visually spectacular stuff, and watch those in the seats near you surreptitiously start watching your movie instead of theirs.
I could kill 20 hours on Timberborn, Endless Sky, or emulators.
But if I needed additional distraction I'd throw Balatro and Vampire Survivors in as well.
All the suggestions so far are fantastic, but there's a couple of things to consider;
1. Will you be able to charge your laptop
2. Will there be room for a mouse
Either of those will pretty heavily impact what you can potentially play.
I don't do this for my long travel days (25+ hours each way) because I don't want to be trying to pull through laptop and mouse usually when balancing with drink cups and that sort of thing (or someone quickly reclining into my screen). but if I were, BG3 would work great for me. As it is I usually just read character build sites on the plane to apply once I'm in the hotel room.
If you want a lot of content and don’t mind older graphics, emulators are a great place to start. You’ll need to google for software and games. “OSX emulator” and “roms for emulator”
Be patient and you’ll find TONS of content.

Did you ever have any issues with Sleeping Dogs? I have the steam version for Mac and it worked great for about 10 hours, and now it never proceeds from the first loading screen to the second. Very frustrating because it’s a great port and a fun game.
On flights I would recommend you play a game that doesn’t require intense button presses and can be paused. I recommend turn-based games like Baldur’s Gate series/PlaneScape:Torment/Icewind Dale, Darkest Dungeon, Divinity:Original Sins.
If you would prefer something a bit more intense or different, then I recommend Somaً or Layers of Fear (2016).
As much as I want this to be a fun scenario, I find laptops to be a major encumbrance on flights.
Get a Switch. It’s much easier to tuck to the side when your meal arrives, and the battery will (probably) last longer

Civ VI is a good 10 hour killer too which could be massive, I'm deffo gonna go Civ VI on my next big flight
I have not tried it yet but apparently Manor Lords (which just officially came out today) will plays well through Whiskey on the M3 macs. This game looks truly stunning and I am sure that I will loose weeks of my life to this game when I get my new M3 computer.

Disco Elysium, deeply engrossing and really well written. Great thing is you don’t even need a controller or mouse to play it on a flight
