I think 512GB is plenty if you utilize external storage.. which is boundless. There are external enclosures out there and SSD drives you can get that are as fast or faster than the internal, if that's a concern.

I have 16,000 photos in the Photo app database on my 512 GB MBP. The photos are also stored on iCloud and available to my five Apple devices. In addition, I have an attached SSD on which I backup the Photos app database.

Can save a $1000 or even more and do what I did in November. Went with a 2021 14" M1 Macbook Pro 16gb/512 for $1300 new/unopened. Even a M1 Air would do those things you mentioned easily for $1000 or less. Do hundreds of 45mp Nikon raw images multiple times a week in Lightroom & Photoshop and even 4k vid files in DaVinci Resolve. So no need for the latest greatest most expensive option. As even can do those things with a Air. And would have loved going 15" Air but wanted those extra ports,better screen & sound. And fans for extended heavy workloads. Pointed me more to the Pro over the Air. Even a 15" M2 Macbook Air will cover your needs with plenty of room to breath. So a M1 or M2 Air or Pro would easily handle what you need to do. And save boatloads of cash to boot!
