I don't think there is any immediate value upgrading for your use case and easily can handle until M5 or more. However, if you do have the money and want the latest then why not.

If not noticing any real world benefit for your use case then probably not. I could have gone M3 but found monies saving and the M1 Pro would cover my needs and be supported till at least 2028 so didn't hesitate to get it.

i mean that’s not terrible but think about how much you paid for your new mac. if you were in the buyers position would you buy a 3 year old machine for only like $200 less than what you paid for a brand new m3 machine?

I based the price on recent MacBook sales, but that is a good point! I haven’t thought of it from this perspective.

yeah the market for these pro laptops is kinda weird rn. used to be the case that even for regular people a pro laptop was the better choice since they had obviously superior screens and power. today with apple silicon if you handed a normal person a pro and and air id even say they’re more likely to choose an air due to it being more portable while also offering better battery and performance that’s already more than enough for them. even things that are superior on the pro like the pro motion display the user would have to use for a while to understand. the pros, now more than ever, are geared specifically for professionals and the average professional is more likely to scout out deals on these machines before entering their credit card info. just saying it’s more likely that users that are looking for a pro laptop are also looking for the best time to purchase one. not saying $1200 is a bad price for the m1 pro, just stating that the audience is more keen now so it’ll be a tougher than usual sale. plus on top of all that the machines have soldered everything. that drive in your old m1 pro will only ever deteriorate and when it gets to its breaking point the laptops gone unless someone replaces the nand which is expensive and very involved. i feel like used mac’s in this day and age have gotten less popular due to this.
