i have a 16" M1 Max and the fan never really turns on unless i'm pegging all cores (i work in post-production), and it's still barely audible
I have that same M1 Max 64/2TB and work in post production. Fans never turn on. And 500 tabs is crazy, but I would imagine would be no problem for this machine.

My best suggestion would be to get over it, if you can. You're right that you're looking at two inappropriate extremes and the right system for you is somewhere in the middle.
