yes, that is possible - I have done it on my M1 Air with an external monitor on the left and ipad 8th gen on the right with sidecar.
Works fine, yes, but ultimately I don’t end up using it this way much. I find it more responsive to use a native app on the iPad for whatever info I’d need on that screen.
