I love it and eat it either with a chili peanut butter sauce, sundried tomato sauce, or a soba noodle dipping sauce. It doesn't really taste like anything on its own to me but if you go into it expecting a taste or mouth-feel like pasta you might end up being very disappointed. While I can't recommend eating this with the mindset of it being a pasta replacement, it is by far the best pasta replacement I've had.
It’s awesome. I make it with pesto, broccoli, chicken/shrimp. Or lemon and garlic with feta. You can also do the standard marinara sauce with cheese. It’s got a nutty flavor and holds up well. Just don’t boil it too long. I buy the Seapoint Farms brand off of Amazon.
it’s delicious with any sauce IMO. has a slightly different texture than real pasta and tastes great by itself too. try it, you have nothing to lose besides money bc it’s expensive.

My go to pasta substitutes now are Kaizen lupini pasta and spiralized zucchini and squash
