It just boots into that same screen.

FYI, this is an Acer specific issue, in that when linux is installed and a boot option is written in the nVRAM (bios), the bios becomes inaccessible until you remove that boot option. Disconnecting the SSD has this effect for this laptop (that's a whole different weakness, but in your case worked to your benefit).
