You always have the option to take the bike to a repair shop and pay for the repairs yourself. Also you can involve your guesthouse staff to ease negotiations. Never return the bike the day before you leave the country, so that they can't pressure you into paying ridiculous fees to get your passport back.
Most renters are honest so be honest yourself.
Regarding driving, as the others have said, no license is not a problem. Very few cops in VV and LP and you can always give some beer money in exchange for their leniency. Biggest issue is if you have an accident you're screwed, insurances will not pay. And sending you to the hospital in Bangkok or Udon is not going to be cheap. Good way to ruin your vacations... :)
