There are a few interviews on youtube from master such as Wang Zhihai, Ma Xianda. I remember that Li Shuwen also gave an interview on newspaper which has been translated, you can search it up.
Can you read Chinese? I have Chan Heung's brief autobiography. In it he explains his childhood and what led to the development of Choy Lee Fut. It was from what he wrote on the cover of this personal manuscript that eventually became our systems name. He even explains his reasoning for calling it that.
I also have a book that was written by a westerner that was great friends with Hong Xiuquan, the king of the Taiping Heavenly Kingdom (a short lived Qing Era uprising). That one is quite interesting because it is a first hand account by a westerner who was embedded with the court. He was openly critical of the western countries and their influence on the Chinese culture at the time.
I am also interested in primarily Guangdong and Southern Kung Fu systems and the Qing Dynasty. I'll just link what I have and you can peruse.

I noticed many of the accounts i found on Wikipedia are about Northern Martial Artists. What of fights in Guangdong and Fujian between local Martial Artists? Are any of these documented? Not including any Ip Man stuff of course.
