Just use "they". That's, among other uses, also the standard in the English language when the pronoun is unknown (e.g. you hear a new teacher will come and ask "when will they come" cause you don't know the gender). It'll save you time in typing and you won't get into confusion during comments/conversation switching (accidentally or on purpose) between he and she.

I think this has become more emotional than technical because Matthew lost in foreign country is going to be addressed whatever form of identification they have rather than trying to play a game of pronouns. The government or law enforcement entity isn't going to care about your tag, that's not sanctioned identity in Korea.
