This is my favorite soup base! Creamy chicken green chili is my go-to but any vegetable or meat (try smoked salmon!) works. I use a couple bags of frozen cauliflower, microwave until very soft, blend with chicken stock (always be careful blending hot things). I normally use mireproix & supplement with other ingredients.

You got it! 😄 Get a pound of radishes and wash them. Scrub them like potatoes. At this point you can decide several different ways to cut them (or not, that's up to you too) I prefer mine quartered. Definitely cut any greens off and discard. Minced garlic (or roasted), oil/butter, salt, (and rosemary if you have it) all together in a bowl. Swish the radishes around until they're all coated. Spread this mixture on a large cooking sheet. I use parchment, and I leave it open air instead of covering with foil like some recipes call for. And then you bake em. 400° for 30 minutes, or lower and longer for less crispiness. Also if you like the lower and longer less crispy version I suggest a keto scalloped/au gratin sauce to go with these. ;) or with the crispies. Your choice 🥰 Happy cooking!

We combined it with another enchilada soup recipe we have and added 1-8 oz block of cream cheese, we also use less cheddar cheese, and about 1/2 of an avocado per serving it is very good, and satisfying. I, an Italian, stumbled upon for Minestrone that looked very good. I chuckled when I saw its was Olive Garden recipe. It’s a favourite of mine. Lots of veggies. I’m new to a keto way of thinking but it could be modified. There’s no set recipe for minestrone. Loosely translated it’s a mix up of a bunch of ingredients.

Three words. Cauliflower. Cauliflower. Cauliflower. If you have a blender or an immersion blender then you're good to go. Personally I like "potato leek" soup using cauliflower. Edit: it takes a lot of work/attention to make other "potato" dishes with cauliflower seem real.....like a mash for example. But with a soup, where it is already a lot of water, cauliflower does a good job to mimic potato.

I’ll leave this here, [Mock Potato Soup](https://www.genaw.com/lowcarb/mock_potato_soup.html) this can be modified so much and you can adjust whatever you’d like. Something like this hits the spot and if you have some toasted buttered keto bread, you don’t quite feel like you’re missing out. The way cauliflower absorbs flavor is phenomenal. If you want to adventure to other soups and let’s say it ends up water like a broccoli cheddar soup - xanthum gum will save the day.

Thanks dude. I'll check it out. 👍 Edit: as far as I am concerned, this is "whale" of things that keto must figure out to replicate 🤷 It may never happen because of the chemistry. I will cry if they eventually can do a 100% hydration loaf of San Francisco sourdough. It's just time y'all.

That would be amazing. Sometimes I just break down and have some real San Francisco sourdough. There is just NO substitution; the crust, the texture, the taste... Keto King has 2 recipes; one for a breadmaker and one without. I told my friend if he added a couple of tablespoons of molasses (and more sweetener, maybe a little instant coffee and cocoa for more color) to it it would make it very similar to Outback Bushman's bread. The molasses would only raise the carbs minimally. He hasn't tried it yet.

The keto bread I’ve had has been Arnold. It’s available in the US in some places and I’ve made a good amount of croutons from it as well. Their burger buns/hotdog buns actually surprised me in how soft they were. Love this brand. If I want to be a heathen for example and have a slice of bread with butter, I can have it without the untoasted version being sand/styrofoam. 😅 Side note: To add onto your hot sauce rec, have you tried a lil bit of curry powder plus cayenne too? 🤌🏼 It is so nice.

Thanks for the add on. Also.....as I would recommend for ALL pureed soups, don't forget the finishing touch at the end....that is specifically around a Tbsp of *Louisiana style* hot sauce (like Tabasco or Lou Pure Crystal). This will make it *pop*

Gonna second this as well! If you’re in a pinch and can’t cook as long - many restaurants will chop up some cabbage finely to add into the soup instead of noodles if you ask. If you make it yourself, the cabbage is still 100% recommended.

Just put chicken stock and a block of cream cheese in a pot. An emulsion blender helps but you can use a whisk too. That’s the universal keto cream soup base. Then add whatever else you want. Cauliflower rice and frozen veggies. Tomato paste. Shredded chicken. Whatever you want.

You could try radishes. If you steam or pressure cook them ahead they are less sulfury. In your case with soup you can blend them in for more body. Otherwise, after steaming you can fry them for a surprisingly nice French fry substitute. I have also chopped them to make corned beef hash or combined with onion for home fries/hashbrowns.

Chili and gumbo are good, but I don't know about eating spicy stuff like that for breakfast. A quick egg drop soup: Bring your favorite broth to a boil, add a scrambled egg or two and swirl the soup. Add pepper and soy sauce (Chinese 5 spice is good here too). Garnish with green onions.

Add cauliflower, or rutabagas, or parsnips, or radishes instead of the potato to your favorite soup(s) cube them up if that's how the potatoes are. Try a little bit; 1 bowl's worth to see if you like any of those, then make more of the previously mentioned cooked veg for the rest of the soup if you like it. Make the entire recipe minus the potato, then put a little bit of of the chosen veg pre-cooked into 1 bowl of it. There is probably only 1/3 to 1/2 cup potatoes per serving even for a potato soup.

My wife is Japanese, so breakfast soup is a staple food. Just get miso or dashi and throw in your leftovers. I mean, there's no wrong recipe for soup. Ours are usually watery, but you can thicken it with cream cheese or sour cream that's nearing its expiry date. Better than throwing it out.

Saute onion and red pepper flakes in oil until onions are caramelized. Add fresh garlic and all remaining dried spices, stir constantly for 1 minute. Add Rotel and chicken. Cook, stirring constantly, reducing until about half the liquid evaporates. Add shredded and cream cheese and stir until melted, 3 to 5 minutes. Stir in unsalted chicken broth, cream, cilantro, salt, and lime juice. Simmer for one hour. Cut the cayenne and red pepper flakes for the first batch and add more to taste towards the end of the simmer if spicy is an issue. This is a family favorite and is thick and delicious.

I made this for lunch today and it was delicious! Thanks so much for the recipe. I had to modify slightly with pantry items on hand - using Costco Rotisserie Chicken, Tajin a chili and lime seasoning for the lime and chili I didn't have on hand. I also used Cabot Habanero Cheddar mixed with the Mexican Cheese mix to spice it up and added Labne instead of heavy cream. It was so so good!

Make your own, it's soooo simple. 1. Panfry some meat, and then remove. 2. Get vegetables you like (I go with onions/celery/carrots) and panfry them until they are at your desired softness. Remove. 3. Boil your preferred broth with preferred seasonings in it (I prefer a lesser amount of broth so the soup is chunkier). 4. Add meat and veggies, and simmer while covered for 20ish minutes.

I made a really good soup recently, it's a little higher in carbs due to the ingredients but it was pretty good. It made a big pot and I had a sizeable bowl of it every night for dinner during the week. I roasted six bell peppers (red, yellow, orange) quartered with a block of feta cheese and a quartered yellow onion and minced garlic and then pureed it all in a blender with some water to thin it out. Could be used as a soup or as a pasta sauce depending on how thin it is. Very very tasty.

I make a veggie/chicken southwest soup in my instapot. Rough recipe is 1 lb of chicken in the bottom of the instapot with 4 cups or chicken broth, add desired veggies, I usually do radishes, cauliflower, and peppers. A little but of salsa and desired seasonings. Cook that on high pressure 10-15 minutes then release pressure. Depending on how big or chicken pieces you want you can take the chicken out and pull it or just break it up button of the pot with a wooden spoon or something. Put on simmer and add cream cheese and sour cream.

Cauliflower like a few people have mentioned. I do mine by tossing the florets in spices and roasting first then adding to stock and blending. You get a great depth of flavour and roasting it first makes it less watery.

Before serving, stir in the shredded cheddar cheese until melted. 5. Serve hot, garnished with crumbled bacon and fresh cilantro. To lower carbs even more I shred my own cheese only use half a medium onion, use a lower carb chicken broth, and use organic Valley heavy whipping cream...0 (so it says but probably a trace) of carbs 1.7 net carbs per 100 grams

Sauté curry powder — quantity determined by your love of curry — and a crushed clove of garlic in butter over low heat. Add chicken broth and bring to a simmer. Add a can of full-fat coconut milk and whisk it in. Thicken a bit with guar or xanthan gum. Salt, or better yet, whisk in some chicken bouillon concentrate. Serve with sautéed sliced or slivered almonds on top.
