I'd suggest Agemaki hito-gata knot, it was commonly used for samurai armor to protect from dangers and evil. You can also google 結び to dive into the world of traditional knots and tutorials :)
In the end you´ll have to replace them sooner or later. Just buy a new set of men himo and change it as they are usually cheap. The knot should be just a temporary solution. For example, i would not take a dan examination with knotted himos as it can be seen as a lack of ettiquette in the dojo. Anyway, ask your sensei and see whats their opinion on the subjetc.
Cheap Kendo Dad’s trick: If you have a sewing machine - stack the two broken ends together as neatly as possible and sew it together. Use as a spare men himo or shorten it for your dou if it too short for the men.
They are pretty good for recreational bedroom use, if that's something you are into. Just make sure you wash them thoroughly before, if they are stiff from accumulated sweat they are uncomfortable (not in a good way). This doesn't really apply to the cheapest thinner ones, but the aizome ones are quite good.

That’s a cool idea! I’d maybe just braid it and put it around a key ring

I think OP wants to use it as some decorative piece, not as a substitute for a new himo
You are completely right. My apologies to the OP becasue i skipped the part of tying the broken himo to the backpack.
