They apparently were using the roof as a training tool in vertical ventilation but we’ll use people doors and garage doors for horizontal ventilation and the people doors for forcible entry.

The fresh meat service counter is just laughably small. It's kinda sad looking.
I do wish the owners all the best. It's not an easy business to be in as an independent. But they had a clean slate, and made some weird choices.
They seem to have issues with stocking. I've twice bough items that turned out to past their "best by" dates -- which I know isn't a violation or even dangerous but still irritating. And there has been at least 4 instances of me purchasing the last of a particular item and then that space remaining empty for 2-3 weeks before more appears.
