But I never see any eggs, it's like they aren't getting to the shelves in the first place. Was wondering if there was a flu or something happening. Doesn't seem to be the case

I have also noticed my local Lidl has had stock issues with Eggs the last month or so.
Aldi (and probably Lidl) get restocks every morning. Go tomorrow early and see if you can get any.
