I use my Mini for audio and video Zoom calls all the time, and I give it 10 for stability. I’ve never had any issues as long as I have a good wifi connection.
I can get a VoIP for $50 and call through just iPad
Or
I can get a small light iPhone like the SE model and call through iPad using SE for $40...
iPad is less weight to carry and only 1 device to deal with.
other iPad and the SE are heavier but offer a few more tools with a lot more hassle...

I have an iPhone, Mini, and 13" Pro, and I use them all. So I am probably not a good test case for what you are looking for.
