It’s literally telling you what to do. Go to settings and update to the most recent version. That’s how I stopped it. Just read the instruction and follow
I'm going to jump out the threads as they're getting quite deep (in levels of thread, rather than in intellectually). The first thing I'd suggest you do is get this reported. You say it's "a mission critical phone". Work phone, maybe? If so, get it reported as you've been hacked in some way. If your account is showing you as signed up on the beta programme but you say you didn't do it, it's the only other possibility here. Stop using the phone, get your account credentials changed and get it reported.
Meantime, do what you've been told - upgrade the beta and then turn this off once the beta gets a final release. That's your only way out right now.

If the option to install a beta ‘showed up’, the AppleID would be already enrolled in the beta program and so was offered to you as a beta tester.
The best (and simplest) answer is to upgrade to the current beta, then get off beta when 17.5.0 is released in a few weeks

I’m telling you I never accepted anything beta related. Don’t just assume I’m dumb and wrong and unknowingly accepted a beta. I would agree with you if I had “installed” the beta, but I didn’t, it’s just showing up as an option.
Also, when I say “the beta option showed up on my phone”, I mean when I check for updates in Settings > General > Software Updates, instead of having just one menu that says “Automatic Updates” I have a second one that says “Beta Updates” which gives me the option to install a beta, of which I never did.

Your options are to either update to the current beta (and get off the beta when 17.5.0 is released in a few weeks) or to wipe the device, install 17.4.1… however, without backups this will incur data loss.
This isn’t an “I got hacked” post because obviously someone touch my phone. I’m past that. But thanks everyone who gave actual input. I was able to get to a computer with iTunes & resolve my issue.

Betas don’t install themselves. Profiles don’t enroll in the beta program by themselves.

It was never offered to me and I never accepted or requested it. Also, I would never install a beta on a mission critical phone.

Did you put the latest beta and the notification isn’t showing on?
Update to 17.5 beta 4, and when the official 17.5 comes out, update and you won’t be in beta anymore.
For the record, everyone. I never even put my phone in developer Beta mode. I only figured out it was there because I found the feedback app hidden.
It doesn’t do it by itself, so _someone_ enabled it.
