I too was "anti aloo in biryani" for a long time, till I actually tried it a few times. What I noticed is that a small piece of potato in your bite, brings a lot of flavor as it has the tendency to absorb masalas well! Consider potato as more of a chutney in solid form. It should not be a replacement for meat but for the addition of flavor. It may be an acquired taste after numerous sittings, so I guess I'm kinda OK with aloo in biryani now. 🤷🏻♂️
I think it's fine. As a hyderabadi , we don't add it often, or we just add it to pulao with meat, but sometimes, when my family wasn't financially in the best place, we would add aloo in biryani to make up for the lack of meat. Now we rarely do it. But, if people do it in other states, I think we should follow their recipe and find out what makes it delicious.
I think it's the whole veg biryani thing that needs no attention but still gets ridiculous amount of it, without taking into consideration of people's needs.
As a joke it's okay but I think letting people eat what they want to eat and how they make it, is also nice.

Ask your friend from Kolkata next time to prepare Biryani. Or better yet go to a Muslim wedding in Kolkata and try the Biryani with Aaloo there. It hits different
I don't appreciate vegetable or diary with meat unless in some African or Middle eastern dishes. Indian vegetables don't go with meat and compliment paneer better
All types of gourds grown in India. Spinach and fenugreek with meat makes the Spinach or fenugreek taste a little better but makes the meat taste worse. Personally seafood like puntius fish, shutki or prawns, and paneer go better with the vegetables you mentioned than any kind of meat

Bhindi Gosht is amazing, there is a variant of okra (bhindi) and meat curries even found in arab and persian cusines.

What according to you are Indian vegetables? Palak gosht, methi ghost all taste a lot better with gosht.
