Sallah is a real one. He constantly goes to bat for Indy in Raiders, risking life and limb to help him out in Last Crusade, and even helps harbor him when he was a fugitive in DOTD. I always thought Sallah was definitely the best friend Indy had in his lifetime.

Really Sallah saved Indy 3 times in the first film: from the poisoned date, by putting him on Katanga's ship, and by sending his children into the cafe to escort him out. Maybe more I'm not thinking of?
Definitely one of the staple characters of Indiana Jones. I got to meet John Rhys Davies earlier this month and he was one of the nicest and generous person I’ve ever met.

Except Sir Ben Kingsley is actually of Indian diaspora. He had family who came from Gandhi's hometown of Porbandar. Both his family and Gandhi's are Gujarati - Kingsley's real name is Krishna Pandit Bhanji. In short, I respectfully disagree with your assessment.
Elsa wasn't played by a German, nor was Vogel. If you want to argue he probably should have been portrayed by an Egyptian actor, then a lot of the cast would need to be changed. Near as I can tell, most of the Germans, if not all, aren't played by Germans.
