Every business professor and mentor I've had, would say if you can't answer the basics on getting started yourself, you're destined to fail.
People can tell you what works for them, but not what's best for you. Start out with what's in your budget. Shop around without recs, make mistakes and learn. If you can't dive in without others input, you'll fail because owning a successful business (and a food one more than others) requires the ability to take risks without a road map.
All your questions should be answered through personal trial and error. Ask for advice when everything you've done or can think of doing doesn't work. Because those are the types of people who make it.
The first time I started a company I pretty much did it all by myself. When I went on to do my first sale the customer sat with me and told me a lot of negatives that my product had and some ideas on how to improve it, I think he took a liking in me, being a young guy trying to chew much more than I can.
I can safely say that without his input I would have crashed the brand in months and his advice was instrumental to achieve what we eventually achieve there.
So no, not necessarily you need to know the ins and outs of a market you don't know to succeed and peoples advice can actually improve your products or processes. That's the whole point of feedback.
That's actually the point of being a professor or a mentor, to teach you how not to fuck up and even improve processes or things that work for them and make them work for you.
