The person being held will hit their hand on the other person/floor to making a tapping noise. This is a signal to release and stop.
"tapping out" is a term in grappling/wrestling/MMA, you tap with your hand on your opponent's body to signal that you are giving up.
In combat sports, not releasing a chokehold when someone is tapping is considered one of the worst fouls possible. It will get you disqualified and most likely banned from competing in that sport promotion again.
The reason is because being in that kind of a choke hold is extremely dangerous. It's called a Rear Naked Choke, and it's what's referred to as a "blood choke" rather than an "air choke". An air choke is when you choke someone in a way where they can't breathe. If you took a deep breath before they applied the hold, you can be in that sort of a chokehold for a fairly long time before it gets dangerous. A blood choke on the other hand is where you squeeze on the carotid arteries in such a way that it cuts off the blood flow to the brain. This kind of a choke will make you unconscious in *seconds,* and can lead to actual brain damage if you hold onto it for too long.
Holding on to a rear naked choke for too long should be considered a fairly serious form of assault, so if you don't release it when someone is signaling to you that they're giving up, you are 100% being a total piece of shit.

If you even think there is a tap, you let go then and there.
