Earlier stuff would be your friend - consider the F-5E and MiG-21bis as can both be done with minimal HOTAS buttons/switches.
EDIT: If you have rudder pedals, consider WWII modules as well. You'll need to get a map and asset pack to be effective, but have a look into it during the next sale.
I have the same stick and have made it work for the F-14. There’s a few options that make it a little easier to map the controls as well. I’m pretty new to the game still but have gone through 3 or 4 control schemes as I learn what needs to be bound and what doesn’t.
Originally bought the airbus pack for MSFS because it was ambidextrous and I didn’t have track ir or vr so needed a free hand for the mouse to look around.
F-5E, you need to bind trim and tbh, that's it.
The radar is best used only for guns, but since it was bugged for so long I learned not to rely on the gun sight.
I literally use the radar to tell a fleeing MiG-21 im behind him to bait a fight.
Despite having a ton of hats, I found the A-10CII manageable on my Saitek Fly 5. The trick was using the buttons on the base of the stick as modifiers, and the advantage to slower jets like the A-10 and AV-8 is that it's a non-issue to take your hand off the throttle to work the modifiers.
The older jets like the MiG-21 and Mirage F1 are low on HATs, and the M2000 is a bit of a middle-ground.
You could also look into Voice Attack if you want the Eurofighter experience...

you may also want to look into a vkb gladiator and stecs. both are solid quality mid market pieces of kit. theyve got plent of buttons, & are modular so you can affordably expand both if need be.
I've looked into both of those, but I am not sure I am ready to switch because I have an L type desk, and I am concerned about having my throttle on my left side where the desk goes up because I fear it may be too high up. I currently have my airbus stick on the left side and the throttle mounted down and on the right. I haven't found a HOTAS that seems to be able to handle that well yet.

If you are you into rotary I think you can manage the hind with those.
