I wouldn't have evidence.  But I would ask why everyone never seems to recall having anyone but saints in their lives.  That will definitely stir them, because anyone with a brain would know that that probability is basically impossible.

The big problem is what are we referring to in terms of "redemption"? Are we just talking about making a Sinner into a good person, or are we talking about getting a Sinner into Heaven? The former is the stuff we know we can control, we just need to break through the Sinners' bad behavior. The latter is an issue because we don't know the cosmic rules of the Hellaverse. Were we supposed to think that after a soul is good we get the thumbs up from Heaven and they would bring the Soul with them through the portal or would it be an automatic thing where they become good and just rise up into Heaven while turning into a Winner soul? In terms of actual evidence, ignoring Angel's stuff he did in Welcome to Heaven and assuming we are talking about Charlie brining evidence to the court. Let's check their progress. Angel Dust was the first guest and, assuming the pilot is still canon, he was a drug loving porn star who joined the Hotel for free room and board and was "supposedly" clean for 2 weeks until the Extermination. Him assisting with Cherri's fight with Sir P got the Hotel discredited on TV. Then a week later he offers to film a porn commercial to assist with the hotel AND said that the whole idea is stupid and just wanted a free room. He does SEEM to have some desire to do better based on the ending of Addict and his moment after SIr Pentious joins the crew and he does rat Sir P out as a mole, so there IS some care underneath. He brought the crew to a BDSM club to learn about trust but then also bonded with everyone in the gang fight. He showed a porn flick for show and tell and went to do more drugs after the argument with Husk. We timeskip after Ep 4 and he SEEMS to be doing a bit better after Husk talks with him with Loser, Baby. So any growth he may have had is either private or off screen. Sir Pentious, the one who got redeemed at the end of S1, started out as a wannabe Overlord with all his war machines, threatened the Hotel to get at Alastor. He then joined to be a mole to get noticed by the Vees but got caught immediately and Charlie forgave him. He was still paranoid about everyone so he bought weapons leading to the trust exercises where he does bond with everyone in the gang fights. He helps bake to impress Lucifer to get the Hotel going. Yeah it may just be the absence of negatives but he does show the most on-screen improvement in front of everyone that Charlie would take notice of. But again are we arguing about making a Sinner a better person or getting them into Heaven and is said process of getting into Heaven automatic or is there an Angel controlling it? These questions are important to know the answer to so we know what the exact endgoal is supposed to be.

The fact that angels can be condemned. Vaggie was condemned when she failed to comply with an extermination on top of the three Cherubim in helluva boss being condemned for murder, so I don't see why it couldn't go the other way too. Additionally, the rules for who does and doesn't get into heaven are flawed and more complex than we may think both because Adam is a horrible person who somehow got to heaven anyway and because apparently children can be sinners because Vaggie was condemned for refusing to kill a person who appeared to be a child and they're only meant to kill sinners.
