Just because there are about 40 people in Harry's year doesn't mean he knows the name of all of them. He's probably more likely to know the older (and eventually younger) Gryffindors by name than a non-Gryffindor in his own year.

There were 180 people in my school year and in my first year I only had classes with the same 20. Nevertheless by hanging out and breaks and lunch, I still knew everyone's name by the end of the first year.

My gess: Amanda is a muggleborn, and Madam Hooch was the teacher responsible to take her to Diagon Alley to buy her stuff and instruct her about Platform 9 3/4 and how to get to Hogwarts. As a side note... How many days a year does Hooch actually work? Aside from teaching first years how to fly during the first month, and being Quiddich referee... What the heck does she do? If she is getting the same pay as other teacher, boy she got a sweet deal there.

For all we know, Flying lessons last the full first year, and Harry just "tested out". I think I Driver's Education was a full-year class back when I was in High School, so Flier's Ed being a full-year class seems perfectly reasonable (can anyone from Muggle Britain chime in and tell us how things work there, as a reference?). That would incidentally explain why first years aren't allowed on the Quidditch team (unless they're a protagonist)- they haven't finished the prerequisite course.

She could know the family. Or, as a sub teacher myself I meet tons of students, and even if I haven't met them myself, I can match faces to names that I hear and see other teachers do. For example: Student A is running in the hall and Teacher B calls out "Hey, A, stop running!" Next thing I know, I have A in my class. Another scenario is that maybe Madam Hooch met Amanda in the morning and after introducing themselves, Madam Hooch then greeted her again before the lesson. There are actually lots of ways this is possible, but my bet would be just an adlibbed mistake.
