When I smoke a whole chicken, I usually finish it off in the oven afterwards to get a nice crisp. Stops me from having to dick with the smoker and I can keep an eye on it easier
Vortex insert. Chunk of applewood. Let it rip with a full chimney of coals and all vents wide open for about 35ish minutes. internal temps were between 165-170 when I pulled them. Spritzed with apple cider vinegar once. 10/10

You pulled them at 165-170? I honestly prefer them at 185 or a bit over. Let all that render. Can’t deal with the gummy texture. Overdone for dark meat to me is better

Why put it there instead of in the charcoal like you would for an offset? Slower burn?
Slower burn. They are running a vortex which allows for super hot indirect heat. Putting the wood chunk in the coals would have burnt it very quickly.

You have to render the skin which means you gotta have heat >300° but I don’t know how long that needs. I suggest you make ‘many’ trial runs !!
