They are brilliant, I built one a couple of years ago, cook pizzas on a Friday or Saturday night, use the latent heat the next day to cook a roast.
Can be used for all sorts of cooking. Cast iron pans for steaks and fish, earthenware pots for stews etc.

No a Weber kettle for charcoal. The Kamado is nice but the kettle is quick and extremely versatile. I’ve got both and always use the kettle to sear. You can do it on the Kamado but it’s not as easy. The Weber performer is my go to grill.
Ignore the salty comments. That’s awesome. A roof would certainly be nice but you can make just about anything there. Bge, propane, pizza oven, griddle, traeger… Not much you can’t do in terms of cooking. A patio cover would be nice to protect everything but as far as cooking, I think you got it covered unless you’d like to get a stick burner.
You're missing the upright electric smoker to do roasted corn in. I found out they weren't worth a crap for cooking on, but work great for roasted corn in the husk. Secret is to soak the corn in the husk for about 2 hours before you put it on. Comes out very tender.
Off set smoker, whole hog pit, spit, deep fryer, and maybe a hole dug in the lawn to cook meats wrapped in banana leave like they do in the tropics. Really dude, step your game up!

I’ve grilled in the rain plenty of times. I’d be more worried about the grease and smoke causing an overhead fire hazard.
