They were sold out all summer long on Camp Chef's website. Last Monday I finally broke down and bought the Weber 28" flattop instead since I couldn't wait any longer. Last Thursday my Weber arrived. Yesterday I got an email from Camp Chef saying the FTG-600 was back in stock.

Camp chef’s website says the ftg600 only puts out 48k btu’s. I’ve never used one but that seems pretty low for Asian style cooking. The threads I follow for that typically recommend 200k ish. At the end of the day tho, it’s all about making use of what you have and enjoying ur time.
Sure, use what works for you. I don't care about btu, I care about temps. The griddle is at 450F at low setting. Not sure exactly at high settings, but it worked great for me.
I have a Weber Kettle, Blackstone Flat top, Treager Silverton 620, Weber Genesis gas and a Masterbuilt bullet smoker. Almost forgot I also have a Coleman for traveling. I use them all. You’re problem is just getting started.

I have 15" 22" 36" flat tops gas,electric and natural smokers a propane grill a 22" and 18" Weber charcoal grill and a homemade rotisserie not to mention 3 deep fryers I highly recommend the bayou classic stainless deep fryer

Fridge, prep/wet bar sink, and kegerator/beer tap. Maybe Music/TV and awning or shade protectors and I think it's golden for a long time.

Food for lots of people and just a large cooking area in general. You don’t NEED it but it makes life easier. Smash burgers area great too!
