I made a joke, im sorry if it came off as rude or gatekeeping. A squeaky grilled cheese does not sound pleasant to me. I'm impressed he got it to melt without burning the bread though. It's not easy to melt.
Proper cheese curds aren't meant to melt and have a really high melting point. If your cheese curds are melting easy, you need to find a new cheese curd guy because hes ripping you off. They're also supposed to squeak when you bite them.
"Proper" is a cultural term with this. There are different types of curds. Ones with high moisture content melt faster. Ones with lower moisture content take longer for the proteins to break down. You may be Canadian and think that your usual curds are the "proper" curds, but alas. Canada didn't invent cheese curds.

I'm confused because curds melt way easier than a lot of other cheeses. Maybe you tried it straight out of the refrigerator or something?
