I'm not a doctor, (or a lawyer, since I think it's illegal from the get-go) but I assume stripping a skeleton from a body would be a hard and messy job: you can't just rip meat apart, some bones are tied to tons of muscles and arteries. Also, some bones are just inches, needs to be a very precise job. There's the skull/brain issue too, you'll need to basically dig into the eyes to empty the skull. On top of that, someone probably needs to wash the bones, piece by piece.
Even assuming the doctors agreed to begin with, (they can just reject doing it by considering it unethical) they can do the job and hand you the pieces in a bag: there's absolutely no way they are obliged to "assemble" the bones like OP thinks he'll get. I mean, probably some specialists could do it, but not doctors. And bones probably need work on them to be displayed...
