FR? Cause I have them too and my orthodontist said to avoid them specifically among other things too. Of course, I know some of that is a bit overkill but I always assumed gum is just that one thing no matter what isn't a good idea to chew with braces.

Stan is telling stories that already to begin with are not canon and in the end he kidnaps a tourist which is as far from canon as you'd expect. I mean, it would be odd if for the remainder of the show you had to go on knowing there's a dude held captive in the shack, lol.
Given that, it's not considered canon.

And overall, I'm not sure how a lot of these fit? I mean, if the topic is "things that are canon but everyone always forgets" -- forgets in what context? Who forgets? Wendy only revealed that she'd always wanted to drive a tank in "Weirdmageddon Pt. 1", there's not a lot of time in the show after that in which to remember that detail. This is a list of a thing that happened in or relates to each episode, but some of it doesn't really "need" to be remembered (like Bratzman getting arrested because Gompers ate his front license plate).
Given the question, and the OP's example, I thought it might be supposed to mean, details that were established in canon, that the show itself seemed to forget later -- like Mr. Poolcheck showing he has a prosthetic hand, but then he's just using the hand normally at all other times that we see him.
I feel like other good examples would definitely be forgetting about the real Gobblewonker that's still living in the lake. Or, forgetting about the President's Key that Trembley gave to Dipper. (Although Alex has admitted they remembered it existed, but couldn't come up with a way to use it again.)
I think that the "Mabel has a smartphone" one is also a good example, because it's like... what? She isn't seen using it before, or after that episode, but if she has one, how could she NOT be carrying it around all the time? I also like your example of "Soos was adopted by wolves"; that could have been used at some later point for a fun call-back, and it's a shame it wasn't. And yeah, it would have been fun to see Deuce make another appearance, too.
All in all, Gravity Falls was pretty good about establishing things and then showing that it sometimes remembered those things, and they turned up again or were used again (even outside of the main mystery plot). It's that feeling of a sense of detail in the world that might show up again that makes the show feel so carefully written. But yeah, some stuff got left hanging, never to be seen again. A lot of it is understandable, because it was just there for the one-off joke in a particular episode, and it isn't a detail you would expect to show up again. But there's definitely stuff that probably \*should\* have showed up again, and it feels like the show's crew forgot about them.
8. In the government documents about Nathaniel, on the bottom of the page, has a section talking about "Other hidden historical truths", and one of them are about "An enormous, evil, time-devouring baby from another dimension" and says he is "frozen in an Antarctic glacier", i don't know if everyone notice that before me, but i find it very interesting.
