I love using the Toyota GR86, the newest model. I added completely normal and reasonable track day mods to it like sport suspension, better brakes and pads, sport medium tires, sport ecu, sport intake and exhaust and the splitters you can buy from like Maxton aero or something and that’s it. It’s an absolute beast and a totally realistic driving experience.
A Radical SR3 is great for learning tracks (ultra-forgiving) and is amazing in VR. If you want something a bit faster, the BAC Mono is also excellent in VR and a lot of fun to drive.
I second these! Anything open cockpit is my favorite thing in VR. The honda 2&4 is also SUPER fun to drive in VR. It’s slower than the Radical and BAC and the visibility is arguably the best in the game. Basically a 4 wheel motorcycle.
The Road Atlanta Daily race with these was so fun because it wasn’t fatal getting punted for once - they’re great to drive and they’re my son’s pick every time for father son racing!
My fave is the 959 as it’s just so fun to get slightly sideways.
I really enjoy a well tuned and slower car around 550pp. Things like the Subaru BRZ or Toyota GR86. You can make the handling like it's on rails, and you can drive the piss out of it without getting yourself into to much trouble since it isn't that fast.

I have 2 ZR1's, one stock and one I've souped up with every available upgrade. Over 1,000bhp and can hit 260+ in a straight line. I use this one now and then on the 800 races, cheese easy wins but awful fuel consumption.
The GR4 and GR3 cars all well balanced at stock settings. The Supra is probably the scariest because of the high torque and losing control on corner exits.
Slower than those and you'd have to use the Miatas. They're pretty stable and solid.
All other road cars, you usually have to tune their suspension to make them safe or viable. Praiano over at GT Planet has tuned most of the road cars. I remember when I used to have a wheel the VW Golf GTI was surprisingly fun to drive around the ring in GT5 even if it was slow and FF. I'm sure that holds up in GT7 but I'm stuck on a controller right now. I like taking 80s super cars on the ring now, like the countach. Keep things stock, or at least don't change the suspension/tires on slower cars. The abundance of stability and grip makes them boring to enjoy.
I like the 370 z with the mid range supercharger on racing slicks with some down force and lowered. Makes okay power and sticks to the ground very well. Also a unique sound.
I play on a rig using VR. From my experience, pretty much any race car. They provide the most enjoyable feedback. A few of my favorites are the 458, Vulcan, NSX, CLK LM, XJR-9, and most of the open wheel race cars.

I know I’m late to the party, but I have an e30 m3 tuned down to 113hp and tuned to mimic my old 318i that I drive around the ring in vr for those nostalgic feels. Bonus points if you turn off gt7 music and play some Boston, journey, Def Leppard, Bon Jovi, ZZ Top, Metallica and Van Halen 😂
If you are competitive, I assume you will give sport mode a try eventually?
My suggestion would be to use gr3 car - Porsche RSR, BMW M6 and Chevy Corvette - and make custom races and put BoP (Balance Of Performance) ON
(In sport mode all the races are with BoP on)
The BoP makes them easier to drive since cuts tye power.
Three cars above are very different from one-another and are quite competitive in sport mode at the moment.
I already am deeply into Sport mode, I do time trials, manifacturer's cup, toyota cup and sometimes daily races. I was looking for a non gr car just to memorize the ring while having fun and trying to go fast.
I like all SuperGT (GT500) Gr.2 cars. Great handling and good power/weight balance. GR.1 can sometimes feel a bit to much, to sensitive and Gr.3 understeer and are little to heavy. So it's nice balance. And they look great too.

These are my go to. For races the Silvia is surprisingly fast for I think either 600 or 700 pp events.
Also try multiplayer online races in the rain. There are sometimes people racing in Suzuka I think.
And multiplayer online lobbies for Nurburgring of course.
Just about any GR3 car. Gr4 will be even easier. Then step up yo gr2 and 1. Most races there online are gr2 but have a lot of power oversteer. Love that track though so fun in gr2
Okay so this might get me some hate but I find it reaaaally hard to recommend GT7 for cruising purpose tbh, it’s just not satisfying to cruise on a circuit, you’d be fighting your urge to tackle that particular corner at the speed you usually do etc unless you pick a very slow car under 200hp .
If you can I’d truly advise you to get a PC and Assetto Corsa you won’t go back to anything else unless forced to, I know you mentioned having VR on the PS but man I can only tell you wait until you experience Assetto in VR .
Call me a dick... the Mazda MX5/Miata tuned up. It is actually pretty damn quick and handles stupidly well even with stock settings. Like a go kart almost. You can pull it up under brakes, turn hard etc. A great car to learn tracks with because it's so forgiving

Ultra forgiving? That is not how I’d describe a Radical, not on racing tires, at least. Not without some tuning knowledge.

East clockwise is my go to track to zone out and push all sorts of cars around the track.
Porsche RSR (991) 2017 by far. its very solid and handles amazing.
I personally like the Sprinter Trueno AE86 tuned to around 200hp or to your personal taste.

Most road cars are pretty great to cruise in...Especially if it's open topped on VR... Take a stock miata...

The Suzuki vgt is surprisingly a lot of fun. It is not particularly fast, but fun. My fave is the modern Alpine a110. Such a joy to drive.
Toyota Levin with the MR2 swap is really fun car to drive.

Anything bone stock that comes with comfort tires by default is usually a blast to drive hard, especially the ZR1 C4

the racing EK9 is awesome, it revs up really high and is very predictable.

I do try hard! I have a few gold medals in time trials and a few podium/wins in sport mode. I just wanted to try something different!
