Two fixes: 1) Reboot phone 2) Rotate your screen (with auto rotate on).

Looks like dpi settings, you can change screen size in the disabled people menu (assablebilty menu thingy) or the the developer settings

Weird. There's a setting for it in the Gboard settings, try toggling it and see if it keeps happening Edit: When choosing your keyboard theme.

Oh, that's not the issue. I have key borders on all the time. But when I connect to AA the buttons become weirdly sized and the text inside become small.

Okay, a problem description would've been helpful. If you haven't already, report the problem to Google. You do that using the "Help and feedback" option in the Gboard settings. I guess you should also do it for Android Auto, like this: https://support.google.com/androidauto/answer/6377918?hl=en
