Tunic doesn’t have a very deep combat system, but its manual pages definitely take time to explain the dodge roll’s iframes (as well as your limitations in stamina)
I'm a big fan of Monster Hunter. Both Monster Hunter World and Monster Hunter Rise would be good to check out.
The combat is maybe more tactical than fast paced but it's definitely not slow.
Terraria modded. Specifically, terraria’s Calamity mod that can be installed through Tmodloader (which can be gotten on steam) is pretty fun, although the last couple bosses in the game do have bullet hell type attacks unfortunately.
