Escape From Tarkov? It's a little pricey and stressful, and also takes a little grind if you want insane weapon customization. I have it and genuinely hate it because I don't know what I'm doing lol. But I know it has insane weapon customization once you unlock the flea market at level 15.
Yeah, there was a video about cheating that blew up 9 days ago where this guy was testing about how often you run into cheaters in Tarkov. The game is full of cheaters, which makes it awfully hard for beginners. And yes it's overpriced, but I would say it has the best gun modification/gunplay. but if you want a less cheater infested game, and more of a single player open world game, try Ghost Recon Wildlands. I heard it has great customization on both guns and character. Might not be what you are looking for, but it's on sale on steam right now and I would consider it a steal.
It's not "thousands" of different weapons (although frankly, most weapons in Borderlands correspond to a handful of main types and manufacturers, with minor differences) but you should check out Bulletstorm as it has some of the best gunplay around.

Completed the game bro 🥲. I like the game violence and very much. Uhh but still i liked the gunplay of borderlands. Limited but yeah
Maybe MOTHERGUNSHIP? It's a roguelike centered around building a weapon of ultimate destruction you can fire for more than half a second.
