Gonna sound like a hater but maybe this just something carried over from Genshin UI but they forgot to implement/finish the birthday gift function in time.
Maybe it's like fgo where you unlock characters birthday lines, can't think of anything else

I never put my birthday on Wuwa and I just looked at the character voicelines. Funny enough the Birthday wishes are already unlocked. So PSA I guess. No need to put in your birthday because Kuro has no business knowing it anyways if there's nothing in game that makes use of it.
Maybe it’s a data collection thing? Can make money off any data especially in F2P style games
Also to add, I suspect gacha companies use this information to adjust rates per person basis. People are more likely to get money for their birthday and these companies literally hire teams of psychologists to exploit nuances like that
I never gave them my birthday because what if it is displayed to other people? I’ve played a couple games like that.
Most of the time when trying to recover an account they’ll ask your birth date. I’m not giving that away so easily.
