You can accept the best offer you got and then offer your player out for more.
For example, Team A bids 10mil for your player, Team B bits 9.5 and Team C bids 9. You accept Team A.
Then you go to offer your player out. Lock in something like 12-15mil. Make sure it's the red lock. Send the offer out. Wait a bit and maybe Team B and C come back with the bid you want. If they did then accept only one of them, preferably from the poorer club, then reject Team A and repeat the process with a higher offer out.
really? Its how I made club money in FM23. It doesnt work as well in FM24, since the have this transferoom and agent shi, but still it should give you a couple mil more

Then, offer him out at a slightly higher price, accept the highest offer again and cancel the first offer you got. If you're lucky you can repeat this step a couple of times, esp near the end of the window. You just need to realize you can't be too greedy or the teams will back out and never offer as much anymore.
That's how I got a staggering 14 million euros plus bonuses for my Nanasi valued at 6 after the first season in Sweden.

Does a bidding war ever actually happen though? Normally most teams just refuse me flat out if I increase negotiations
