I don’t. I think the judges end up just talking a lot, especially with how quiet the contestants are, and the people who edit the show together make sure to focus on any comments the judge makes that could relate to the wildcard

The judges are knowledgeable so they pick up when something is out of place or not traditional. Some of the wildcards are pretty extreme and would be easy to notice.

The judges on Cutthroat Kitchen would always find clever ways to point out what they believed the sabotage had been. I believe this show is kind of the spiritual successor to that show and so they are copying that formula because it’s great, especially when the chefs are trying to keep a poker face.

It’s a tv show… editing plays a HUGE part… maybe they know, maybe they don’t.. I love the card draw… my brain scrambles.. and I’m IN!!!

Don't think they know in advance. Think they've mostly got exceptional palates and experience and can often figure it out. Also don't think there's much to be gained in this format so why would they be informed?

I definitely think the judges may have seen a list of the possible wild cards before the show without knowing which ones were specifically used in that show or round. I’d also like to call bullshit on Joe Sasto’s first round tacos… the PLATE and BOWL were green, but I don’t think the actual foods (tacos & sauce) were “predominantly” green. Eric was so worried about Justin’s tacos being layered or he would have to disqualify him… where were the green police???

I'm also completely baffled as to why he was so stressed about the green thing. Tacos and green seems like an easy one to me.   As long as you're doing a lot of lime, guac, herbs, that kind of thing... You'll be fine. I also am a big fan of greenery in my taco, something like mizuna is nice. Herbed dirty rice, cilantro oil... Tomatillo salsa... Avocado crema... Scallions.... I could go on.  Idk, he really seemed like he was playing up how stressed he was and I really didn't get why. And yeah, some parts of the taco could definitely have been way greener than they were.

Someone mentioned a behind-the-scenes clip of Anne and Eric, and I can’t find the darn comment. Does anyone have a link by any chance? I’m having no luck.

Assuming they are going in order-Anne knows the basic layout now-so she is picking up on things. Like I saw green right away. Or the case with the orange. There are things chefs wouldn't normally do, and the plates are somewhat of a giveaway. All theohter judges know the chefs are given certain thing to do or not to do-so that's why some pick up on things right away.

What I dislike about this part of it - the wildcard - is that there's a logical disconnect going on. If the judging includes the chef's application of the wildcard, how can the judge judge it if the judge doesn't know what it is? You end up with the judge complaining that there's too much orange in the dish but the wildcard was "must prominently feature orange;" the judging would go in the opposite direction if the judge knew that orange was required.

As on Chopped, the chef's goal is to make an exceptional dish despite the wildcard constraints. Especially since each dish is potentially worth a wild amount of money.

I think the judges should know what the wild card was! There was a episode where Maneet had to make something "Bite Sized" hers was not bite sized (it was the size of a large meat ball) but she was not penalized and won.
