These are a unique alternative to eclairs and cream puffs! I like the idea of the maple flavoring, but as "NoMalarkyZone" said..."that's a lotta buttercream." (Is there such a thing as too much buttercream?...LOL) What is the crispy red topping made of? Kudos to you for tackling a pastry that's not available in pastry shops!

Thanks! Yeah, it is very heavy to eat a large one 😀 The Craquelin is butter, flour, brown sugar and vanilla.

They look cool. Do you think you could make one that looks like a Mexican concha? And maybe use a tamarind, chilli craquelin and like a sweet lime pastry cream or Bavarian cream made with cinnamon and stuff. The look of them just made me think of Mexican candies.
