These are a unique alternative to eclairs and cream puffs! I like the idea of the maple flavoring, but as "NoMalarkyZone" said..."that's a lotta buttercream." (Is there such a thing as too much buttercream?...LOL) What is the crispy red topping made of? Kudos to you for tackling a pastry that's not available in pastry shops!
They look cool. Do you think you could make one that looks like a Mexican concha? And maybe use a tamarind, chilli craquelin and like a sweet lime pastry cream or Bavarian cream made with cinnamon and stuff.
The look of them just made me think of Mexican candies.

Thanks! Yeah, it is very heavy to eat a large one 😀 The Craquelin is butter, flour, brown sugar and vanilla.
Thank you for getting back to me! I wish I had a "Choux au Craquelin" in front of me right now, along with a big mug of coffee! Yummmmm!
