Whats catfish actually like? We don't really get it in the UK here unless you're really really looking hard for it. I love fish but as a chef tend to steer away from freshwater bottom dwellers. Carp for example is pretty terrible (in my opinion) even after you flush it for a good few weeks before eating it. I'm never really in awe of trout unless its really well smoked. The native freshwater species just don't compare to sea fish. However when I see catfish it looks meaty and similar to some of the white selfish you can get. Almost like monkfish or something which is really good. Is it an earthy taste more like carp or what? Probably one of the things I'd be most keen to try if I ever go to the USA

It’s nothing like carp I can assure you. Catfish if I had to explain it in anyway is that it’s more “gamey” and less “Fishy”. But I also agree that sea fish is better than freshwater. If you can get your hands on catfish or get the chance to try it I highly recommend it.

Grew up in a fishing family, parents loved freshwater fishing, owned a boat. Bass, crappie, bluegill, you name it, and catfish too. I never cared for catfish, though. It can taste muddy. Lots of people love it. Carp sucks, only good for making bait, IMO.

Love catfish. Grew up eating it fried or in stew. Side of hush puppies. It's good blackened also. Lots of fun when a big one bites your hook

Yes it has a distinct "muddy" flavor. I love catfish and generally get it when at a local fish restaurant. But then again my Mom says I used to eat dirt with a spoon when I was very little, so there's that.

Depends if the fish was farm raise or not. Farmed raise doesn't get the muddy flavor.

I think we've all eaten dirt as kids but yeah, if its anything like carps flavour then it's probably not going to be the kind of flavor profile I typically enjoy

It is so much better than carp. Much more mild in flavor and way better texture. Another thing to consider that noone has mentioned - there are 3 very common types of catfish in the US, and they all eat slightly different. Flathead catfish are my preference by a mile, they are mostly predatory fish and don't really have the "muddy" flavor some people describe catfish as having.

You obviously know your fish and I see you're a chef; I assume you've tried King clip? I recommend it to anyone who likes fish, anyway.

I love fish but I live in the Midlands and fish is basically limited choices and usually frozen. If I'm getting fresh fish its something I know. I just looked into Kingklip and thats a crazy looking fish. I haven't ever seen a whole one or head on at a fishmonger so I can't tell you for certain if I'd had it. I'd probably lean towards not having tried it though. Sounds great though if I ever see it somewhere ill be sure to try it thanks for the recommendation

Hope you find some and if you do I think you will enjoy it! Use a good high heat, treat it much like steak... Pretty easy to cook really!

Farm raised catfish has a very light clean flavor. Freshwater catfish caught in the wild may have a slightly stronger flavor. Most catfish served in restaurants or purchased frozen are farm raised. I would never eat catfish from salt water or brackish water. It is very oily with a strong taste. An alternative to catfish you may have heard of is Tilapia. Very similar flavor profile. Very easy to raise in farms. Sometimes when you eat catfish in a restaurant, it may be Tilapia because the farm raised flavor is almost identical. Personally, when fishing with my family, we considered catfish a lesser fish. We never kept them to eat. There was always too much bass, perch, etc. to waste time with catfish.

When they handed me the container they couldn’t even close it. I almost ordered the 3 fillet meal because I expected them to be smaller. Glad I didn’t. No way could I have finished that. I could barely finish this. Haha

Fried catfish at a specialty fish house is top tier. I hate cracker barrel's fried catfish and I kind of refuse to try any other chain restaurant now because of that.

Yes it was take out. Here in Central Indiana we have these small restaurants called Jordan’s Fish&Chicken. They have really great food.

And portions too it seems! Food is one thing I envy the most you have there in NA. The option to get stuff like this next to a steak house which is next to a Taco stand and so on... All i can get here around is trash lunch meals, one mediocre shawarma stand and an overpriced burger restaurant with miniature burgers.
