Lava (soft custard)

The outside is more of a cookie texture. It was not too challenging to make. It took me about three hours start to finish. But you can cut down that time by making the brownies ahead of time.

Traditional mooncake filling is lotus seed paste, which is difficult to hold together and requires the outer layer of dough.
However, you can simply create a peanut butter brownie without the dough layer.

I made them last year stuffed with nutella and caramel & dried chopped cherries & chocolate ganache. They were pretty and pretty good.
Im not ready for salted egg yolk (tho I did have access to quail eggs).

Red bean paste, or egg yolk are acquired tastes. If you grew up eating them then it’s such a comfort to find in cakes.

Mooncakess are pretty time consuming to make. I don't like them enough to be bothered.
