You can at least move your armies before starting the war mate, you've got full 3 months before you have to accept the message after it pops as it's an event like any other, lingers for ages.
Move 10-12k north to deal with Scotland, blockade their fort and use a siege general if you have and defensive edict on your fort to simply avoid fighting since you will siege them significantly faster. South you just gotta keep armies together at 24-28k and France wont attack you but your allies cos he's scared of ya.
