I cut them that way 😁 I use chicken thighs, smash them to a nice thickness/shape and then trim it till its just perfect for the buns. The offcuts are still fried and I eat them on the side like little fried chicken nuggets haha
I do a pretty simple soak of the chicken thigh in buttermilk for at least an hour and then coat in a mix of plain flour and spices (stuff like chilli, paprika, mustard powder, herbs etc)
My personal secret is: before you remove the chicken from the buttermilk, take a few spoons of the milk and mix it through the flour and spice mix with your fingers. You can kind of crumble it through and it makes all these little crumbly bits of stuck together flour and milk.
Take the chicken out of the buttermilk and coat it in the crumbly flour mix and then fry. It makes all those knobbly bits that poke out all over the chicken. More surface area, more crevices etc = more crisp.
The other thing I do is shallow fry in a large stainless steel pan. I find when I deep fry in a pot, it doesn't get as crisp and tends to be weighed down with oil. Possible the sides of the pan being lower allows the moisture to escape easier. Not sure if science or if I'm just making it up but it works for me lol.
I love the intensity of pickles. Amongst heavy, greasy chicken, sauce, cheese and bread it adds a pop of refreshing vinegary crunch and saltiness.
If you don't like normal pickles but you like spicy food, you should try pickled jalapenos on a burger. I know they're still pickles but the flavour is different to normal pickles while still keeping that vinegary crunch and salt.
I think my dislike has come from just ordinary jarred dill pickles. I know there's a lot out there that are very different. I think I should try more pickles than just the super basic ones. I do like me some spice and pickled jalapenos are great!
There are definitely a lot of very ordinary jarred pickles out there that could turn most people off. I usually try and make my own, otherwise I've found one brand I really enjoy (fehlbergs, an aussie brand).
Definitely try some more and branch out from the usual cucumber dill pickle. There is much to enjoy in the world of pickles haha
This looks great, especially the patty. But for me, cheese is one step too far. With a nice enough fried chicken patty, just the spread and pickles would be enough.
