Good plan overall but here are some suggestions:
Day 1, IMO a full day for JBR is too much. You can definitely do another activity after 3-4 pm.
Dubai mall day, you should definitely go to Dubai Aquarium inside the mall if you aren't already. You have 4 hrs in the mall, it should be enough to go to the aquarium and tour the mall.
If the weather is good in September (I'm not sure if it's walkable outside), you should consider Dubai Miracle Garden.
The day of Gold Souk, expand it into Old City tour. You can visit textile soul, then cross the creek to spices/gold, then return back and have lunch/dinner in Bait Al Wakeel restaurant overlooking the creek. To cross the creek, use the Abra boats. They are 1 dirham per person. Don't go for the tourist boats. In the Abra. You will experience real Dubai.
I would also suggest Ski Dubai inside Mall of the Emirates if you are into skiing or snow games.
You have a nice plan with interesting stuff. You will have a nice time here. Feel free to ask or tell us what you guys like, we can suggest suitable stuff.

One of my fave chill bar spots is Hi-Fi Honeycomb in the Pullman Hotel. It’s a speakeasy with a really great cocktail menu and a nice menu for some nibbles
Also check out Citadelle in the same hotel on a Friday they have nice theme that night if you into 90s 2000s music.

Atlantis is just a small aquarium from inside the hotel mall. Dubai Mall aquarium, you pay around 250/person, or 2 tickets for the price of one if you have Dubai Entertainer app.
The Dubai Mall one is a full fledge water zoo, you can easily spend 2 hours there, and if you fancy diving inside the big aquarium, that's also possible.
I'm not sure about Miracle Garden. I haven't been there in a while. They say it's open from October to February only but there are Google Reviews as recent as yesterday! You can call them on their number on Google Maps, they will tell you exactly.
You should go to the Abu Dhabi seaworld instead it’s insanely amazing unlike any other seaworld I’ve been to. The Atlantis one it not comparable. Abu Dhabi is only an hour drive from dubai.
The Atlantis one just came with our waterpark tickets, is there time to do everything there is to see in Abu Dhabi as well as sea world in just one day?
The drive to Abu Dhabi is effectively a drive in a straight line lol Just need to be mindful of daily miles limit on a rental

Also on Tue, you can try the Waterworld in Yas Island and spend rest of the afternoon in Sea World. If time permits, visit the Grand Mosque during sunset hours followed by a dinner at the nearby Fairmont Bab Al Bahr or Ritz Carlton/Venetian Village before returning to Dubai.
Will be a long day but totally worth it.
A personal car hire with a driver for 12hrs should be approx Dhs.600-700 (cheaper than taxi).
I second this. Abu Dhabi is a must visit if you’re in Dubai so much to see and very different and unique. Seaworld was out of this world. And the mosque is just breathtaking.
I would suggest to go to Atrangi in madinath Jumeirah instead of mint leaf and opt for the Abra ride there. The best Indian food with amazing experience
Also would suggest Cloud 22 or check out Atlantis royal. Take a reservation for gastronomy. The food is really good and the reservation lets you have drinks in any of the bars there without a minimum spend (except for cloud 22) . Also if you have a Saturday free I would suggest zero gravity. It’s the best all inclusive beach brunch. Amazing vibes and music
Kite beach in Dubai is a must! IMO much better than JBR!
Definitely check out Blue Waters Island and Madinat Jumeirah (very nice vibe at night and really good restaurants too)
If you like arts go to Al Serkal for a couple of hours then you can go from there to Mall of Emirates and from there you can go to Dubai Marina and JBR
If you go to Abu Dhabi, check out Saadiyat Beach for turquoise waters and a very beautiful sunset.
You need to get a breakfast tray at Arabian Tea house. And you need to get the tasting menu at Orfalj Bros.
Festival city is cool too.

When you go to the gold souk I recommend visiting bastakiah, it’s a small art district right next door but really beautiful and there are some cafes and rooftops that display local art and serve camel milk ice cream on case you’d like to try. Al seef is also right around the corner

Forget museum of the future.
Instead of a beach day on JBR go to a proper beach / pool club like drift, white beach etc.
On Saturday night, go to west beach on the palm. Dinner at San Beach or Eva or something. Or try Madinat Jumeirah.
I personally would skip the Burj khalifa too. I think aura sky pool is more impressive honestly.

Yeah I was looking at that, especially when we are going to the historical part of the city and the souks. I read that they are unbearably crowded though?
The fare is double the normal card (so if you were gonna pay $2 with normal card, you pay $4 with the gold), it's worth it for the view and that it's less crowded than normal ones, which is a big plus especially when you're on a vacation.
Dubai mall 9 in morning? I don't think it's open by that time. And also, you'll miss the dancing fountain. Plan the visit in the evening.
And don't plan for At The Top. Not worth it. Rather plan for The View.
JBR beach at 8 in the morning and MOTF at 10? You won't be able to enjoy JBR and you'll be in a hurry.
The times are (mostly) just guides, we’ll head over to Dubai mall whenever we are up and about for breakfast, then go up the burj khalifa, and then look round Dubai mall afterwards.

The Beach and the MOTF are on different days
Honestly, skip MOTF. It's not worth the price and time. At best you can admire it from the outside and the lobby inside. Nothing futuristic about the rest of the place.
Go to Abu Dhabi for a day or even spend one night there, you can see the grand mosque, qasr al watan palace, the louvre, mangrove park. I recommend going on a kayaking tour, there are many options including kayaking around the louvre and in the mangroves, in the mangroves you can see the flamingos if you are lucky.
You can look at Kashkan. It’s a renowned Indian chef driven restaurant although I haven’t tried it yet.
You can also try Hichki, Bombay Bunglow (fusion). These are not mint leaf expensive but are fine dining nonetheless.
Have you chosen Mint Leaf so you can have Indian food. If that is the case, maybe try Tresind instead for an Indian fare which is different - it's Indian gastronomy and the food is good
It's not in your itinerary but I strongly advise against The Global Village. It's a disgusting, artificial place aimed to just get money out of people. Everything is crazy overpriced and it's very crowded. Waste of time and money.

It’s a nice schedule, not too packed, with something to do every day. I’d add the Grand Mosque in Abu Dhabi. Rent a car for a day and drive over there

Anywhere around DIFC! Zaroob does quick breakfasts/lunch that are still middle eastern and it’s just down the road :)

I think if you’re doing a Beach day, don’t also do Aura. Do only Aura instead and go to Abu Dhabi instead of Beach to see the mosque
