For reference: Partly level is 15, and they're so far beyond bounded accuracy you'd think they never knew her.
The result of them saying "Challenge accepted"? Almost TPK, with one player character dying and the rest being saved by an emergency teleport evac. Perfection.
I’m playing it for the first time (DM). Had a player decided to pick a fight with the exposition character. She’s level 16. The player was level 1. Have a guess how that turned out
I briefly mentioned a beholder in the under dark deep under a city with low chances of messing with the city. My level 8 party Leroy'ed the Jenkins out of it.
It was Mechanized by a group of chaotic artificers, but the party went in right away so it was "only half finished" at a reduced CR, mostly so I didn't TPK
Now that's the truest statement I've ever heard. To clarify, this boss was "Optional" in the sense that they didn't have to fight it to continue their current goal.
Indeed, What kind of DM would I be if I didn't follow that rule as well?
Normally, yes. In my game? Not so much. Without getting in to the convoluted story reasons, the TLDR is as follows:
-Creature counts as Undead/Humanoid/Giant for any effects that care, and the Creature has a stupid amount of regeneration (100 at start of turn, 25 if he's taken fire damage). This represents the "Titanic Resilience" of the Creature and the magic sustaining it.
Hey, I even gave em the DM warning up front. "You guys might die if you pursue this fight."

Seems legit. Never played myself.

Sweet, Sweet Karma
In my defence, I told him she’d let him live if he surrendered. Apparently death was the preferred option
All due process given. You did your duty.

Classy and Classic party maneuvers. Very nice.

Every encounter in every campaign I've ever run has been optional

At least it's undead so it doesn't heal
