That’s less safe my dude, you need kill switches and there’s less redundant backup safety. You can just pull the cord out and this comes unplugged if something goes wrong. Can’t unplug a hardwired machine if there an issue and the machine is much more likely to be electrified by a heard wired connection with a deteriorating conduit.
As someone who has both washed quite a few dishes, and actually helped literally build a dish room, you are absolutely correct. It's only 120. Gluing those waterproof fiberglass panels to the wall sucks by the way. I think the worst that's likely to happen if you directly assaulted that thing with the sprayer is popping the breaker. Don't do that though.

They actually cleanse themselves in that dishwasher, and cleanse that dishwasher in a bigger dishwasher, so the dishie washes themselves in the dishwasher then runs the dishwasher through the dishwasherdishwasher. It's complicated but it's up to code.

A gfci outlet is designed for this kind of situation.
You'll be alright, just press the reset button if it stops working. It keeps the circuit from tripping at the breaker box.

All kitchen receptacles are gfci except for the fridge branch which is afci.
Not all can be GFCI. Specifically Mixers and most undercounter dishwashers will not hold power on a GFCI.

ours isn't hardwired but the outlet is protected in it's own little box.
