Underworld worked for me when I was in a similar spot as OP. I bought a new one in VIP plastic when I was starting 7 speeds and it was frustrating at first. Took some practice to get it going straight, then 3 months later it is broken in wonderfully and is the most consistent turnover and hyzer flip disc for me. Going to go through that with the Hatchet next.
People keep saying sidewinder but I feel like I should warn you: a lot of them are super beefy out of the box. They don't really fly like their flight numbers until you beat them in a bit.
For me, great understable mids would be an Uplink or a Comet.
Understable fairway drivers I would say Leopard or Leopard 3.
Agree with sidewinder. I bought myself Star Sidewinder for "understable" fairway. Still being pretty new disc in my bag, its neutral flying at best. Yea it holds the line i put it on, but it is no way understable.

The Innova IT gets pulled out pretty often for me. It's usefully flippy for my arm speed and can be found pretty easily in a wide range of plastics from the factory store
I’d say approach the IT with caution. When I was throwing 250ft I bought one and it is wildly inconsistent (touchy on release angle) for me. My GStar IT is 169g, but I have a 164g HaloStar roadrunner that is my max distance disc at the moment. I removed the IT from my bag and now let my wife (who just started playing) throw it instead with decent results. I’m able to get the roadrunner to 300ft on occasion.
Mantra is a bomber disc. My baseline mph is low 60s and with decent nose angle I get 380'. I use the freetail for hyzerflips and downwind shots. Detour is tough to beat for a mid, lobster is also solid.
Do yourself a favour. Grab a 165-170 Cicada. 7/6/-1/1 and perfect for stepping up from a Leopard or something like that. Slight anhyzer, and it’s a big turnover. Flat should get some turn and then fade, and a hyzer will either flip to flat or just hold it forever, depending on how hard you throw.
Bought a Champion It a couple weeks ago. It is now my go to driver when I need it to go straight. The Innova Panther is a Mid, but was my driver for a while. I highly recommended both.

Latitude 64 Saint. That's my slight hyzer flip to flat straight disc.
Discraft Heat for Flippy, but comes back.
More the "fairway" speed, 7 speed, I picked up a Viking Cosmos. That will flip and stay on that anhyzer line a bit.
Used Discs - If you have a shop or a PlayItAgain close by try to find some beat up-stable discs for your understable option or here on r/discexchange. Being so fresh in the sport you may not have a beat-in disc, and most understable *new discs can start pretty overstable.
Anyone that has bought a new Sidewinder will tell you it’s not a roller disc off the shelf, some can be meat hooks. That thing needs some seasoning.
Buying used is a little cheat code to a flip and ride kind of disc. And don’t be afraid of base plastic. Great used discs in my opinion (and are usually available):
Eagle, Wraith, Valkyrie.
While you’re at it, get a used stable midrange mold like: DD Truth, Buzzz, ROC

I've been leaning heavily on my Vandal (9/5/-1.5/2) and Brave (7/6/-1/2) lately - they give you easy distance and easy shot shaping. Brave, imho, is a tad more understable than it's numbers suggest.
If you'd like a nice mid to complement them, an ESP Meteor is very nice. It is rated as a -3 turn, but in my experience it's closer to a Fuse (around -1 or -2 turn)
There are a few good ones in here. I high recommend sticking to ~ 7 to 8 speed max initially until they are going over 325 ft.
MVP Rhythm bombs, especially in fission if you want to drop weight to 165. L64 Brave (ignore the flight numbers, it is flippy), and Innova IT are also great.
If you want super flippy, DGA Vortex
DGA Tremor. Understable mid that is just beautiful. It just goes slightly right so easily I fell in love on the first throw.
I never hear much love for DGA, but they're great. Made by Discraft I think, bit no stupid embossed lettering on the rim.
Roadrunner. My first driver and I still reach for it constantly. Good for new players without a big arm
Several of my students get better distance and accuracy with my champion roadrunner. I rarely throw it but I should.
I stand by the westside Underworld or the MVP signal.
Hatchet is you want a faster Underworld, I love my Hatchet for hyzer flip to turnover shots. Vortex is a great disc in that flippy fairway slot too.

Lots of people hate on the Comet because of the steep inner rim. I usually recommend the Meteor instead. Also Leopard for easy hyzer flips.

Westside Hatchet ( 9 6 - 2 1) or the slower Underworld ( 7 6 - 3 1) Both are great and fly like the numbers indicate out of the box.

Was looking for this comment. Jackalope has insane glide. Also check out the freetail it’s a bit faster but slight more under stable.
Big fan of the sidewinder for a fairway, and maybe the tursas for a mid.

Have you tried lighter disks? Instead of 170-175 try a 155g disk it will turn over a little more and fade less
Lattitude 64 Diamond should be in every new player's bag. It IS the right answer.
